Instructions

Prepare the steak.
Pat the steak dry with paper towels. Trim away any large pieces of fat or connective tissue, then cut the steak into approximately 1-inch cubes. -
Season the steak.
Place the steak bites in a bowl and sprinkle them evenly with Cattle Drive® Beef Seasoning. Toss until all sides are coated. Let the seasoned steak rest at room temperature for approximately 10 minutes while the skillet heats. -
Heat the skillet.
Place a large cast-iron or heavy-bottomed skillet over medium-high heat. Add the olive oil and 1 tablespoon of butter. -
Sear in batches.
When the skillet is hot and the butter begins to foam, add half of the steak bites in a single layer. Leave space between the pieces so they sear instead of steam. -
Cook the steak.
